While preparing lunch each day, I try to use up leftovers whenever possible. The other night we had fajitas, but there was only one tortilla left. Emory only likes the tortilla, and Elliott can eat at least two tortillas fully stuffed, so I had to figure out a way to accommodate both of them for lunch the next day so I wouldn't have just one lone tortilla sitting my fridge forever. I had also been contemplating a St. Patrick's Day lunch, so this is what they ended up getting. :-)
I used a small heart shaped cookie cutter to make shamrocks out of the tortilla. I didn't have any avocado or other green spread, so I settled for making green peanut butter. Essentially it's not much different than a peanut butter sandwich, but it's all in the presentation, right? The stems were made from celery, which went great with the leftover peanut butter.
We also had green grapes, green yogurt with green sugar sprinkles, and a pot of gold (mandarin oranges). It's not pretty or particularly ingenious, but the kids got a kick out of green peanut butter!
Elliott asked if he could have a red lunch too, so I think we'll work through the rainbow this week.
